Maple syrup Recipes

Maple Syrup, a favorite at Mile Square Farm for pouring over pancakes, waffles, and ice cream, can also be used to add flavor and replace refined sugar in a number of recipes. See Cooking with Maple Syrup for some tips.

We've collected a few recipes to get you started or check-out some of our old favorites. How about sending us your favorites, like Maple Vinegar Roasted Pork submitted by Mark Loether or "wax on snow" sent in by Tom and Carrie Snye or the maple upside-down cake submitted by D. & S. Giddings?

Maple Vinegar Roasted Pork

1/2 cup Rosemary Oil
1/4 cup Maple Vinegar
3 cloves minced garlic
1 tablespoon Dijon Mustard
1 tablespoon honey

2 pork tenderloins, approximately 12 ounces each
salt and pepper to taste

Combine all ingredients and marinate for about 8 hours. Discard marinade. Roast at 375 degrees F for about 20 -30 minutes or until the pork reaches 155 degrees F.  This may also be grilled.

Wax on Snow

Heat maple syrup to almost a boil and pour over a basket of fresh, clean snow. Allow to cool. Roll on a fork and enjoy!

Quick Maple Upside-Down Cake

In a 9 by 9 inch pan melt 1/3 cup butter; add 3/4 cup maple syrup. Remove from heat and add 1/2 cup walnut halves. Set aside.

In a mixing bowl combine:
1 1/3 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup white sugar
Add:
1/3 cup softened butter
2/3 cup milk
1 egg
1 tsp vanilla

Mix well and beat until well blended. Pour batter over walnuts and syrup and bake in preheated 350 degree oven for 45 minutes, or until top springs back when touched lightly in center. Invert immediately onto serving plate and let stand 5 minutes. Cut into squares and serve warm, with whipped cream if desired.

Maple Walnut Ice Cream

1 quart cream
Pinch of salt
1/2 cup granulated maple sugar
1/2 cup chopped walnuts
1/2 cup chopped hard maple sugar
1/4 cup maple syrup

Scald cream, dissolving into it the 1/2 cup maple sugar and 1/4 cup maple syrup (or use 3/4 cup maple syrup) and the salt. Chill overnight in a glass container. Freeze in a crank ice cream freezer, adding nuts and chopped hard maple sugar before the last 20 cranks. Pack and freeze until hard. Enjoy topped with pure Vermont maple syrup!

Maple Bars

1/2 cup granulated sugar
2/3 cup sifted flour
1/2 cup soft shortening (or 1/4 cup butter and 1/4 cup shortening)
1 cup nutmeats
1 cup rolled oats
1/2 tsp baking powder
1/2 cup maple syrup
1 tsp vanilla
1 egg

Heat oven to 350 degrees. Grease a square pan, 8 x 8 inches. Mix all ingredients thoroughly. Spread in the prepared pan. Bake 30 to 35 minutes. Cut into square while still warm.

Maple Barbeque Sauce

1/2 cup maple syrup
1/4 cup soy sauce
1/4 cup sherry
1/4 cup ginger
3/4 tsp dry mustard
1/4 tsp nutmeg
1/4 tsp cloves
1/2 tsp salt

Combine all of the above ingredients. Marinate the meat overnight. Grill, basting frequently.

Maple Glazed Carrots

8 medium carrots
3 tbsp butter
1/4 cup maple syrup
1/2 tsp brown sugar

Slice carrots. cook until tender. Melt butter. Add maple syrup and brown sugar. Simmer carrots in maple syrup mixture until glazed. (Try this on pork chops!)

Spicy Maple Syrup Dressing

2 tbsp maple syrup
1 tbsp horseradish sauce
4 tbsp red wine vinegar
5 tbsp olive oil
1 clove garlic, finely crushed

Mix all ingredients together thoroughly. chill and serve with salad or raw vegetables.
