More Maple syrup Recipes...

Old-Fashioned Vermont Beans
2 pounds dried navy beans
1/2 pound salt pork, sliced & cut into cubes or 1/2 pound thick bacon, cut into 1" pieces
1 medium onion, cut into quarters
1/2 cup brown sugar
1 cup maple syrup
2 teaspoons dry mustard
1/2 teaspoon pepper
2 teaspoons salt
2 cups boiling water

Preheat oven to 350 degrees when ready to bake. Soak dried beans overnight and precook. Line the bottom of a bean pot or casserole with half the salt pork or bacon followed by the onion. Add cooked beans. Mix together remaining ingredients and pour over beans. If necessary, add more water to cover. Top with remaining salt pork or bacon. Bake 5 to 6 hours, adding more boiling water and syrup if liquid is needed.

Maple Nut Muffins
1/2 cup maple syrup
1/4 cup chopped walnuts
2 tablespoons melted butter
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
3 tablespoons maple syrup
1 egg
1 cup milk
1/4 cup vegetable oil

Preheat oven to 425 degrees. Grease 12 muffin cups. In each cup put 2 teaspoons maple syrup, 1 teaspoon chopped walnuts and 1/2 teaspoon melted butter. Sift together dry ingredients and set aside. Beat together syrup, egg, milk and oil. Add to dry ingredients, stirring just enough to blend. Fill each cup 2/3 full. Bake for 20 minutes. Invert muffin tins onto a wire rack covered with wax paper, and let stand for a few minutes. Best when served warm.

Maple Fudge
4 cups maple syrup
4 tablespoons butter
1/2 cup chopped butternuts or walnuts

Boil maple syrup and butter until it reaches 236 to 238 degrees on a candy thermometer (soft ball stage). Stir often. Cool until lukewarm (110 degrees). Stir until thick and creamy. Add nuts. Pour into a buttered pan and cut into squares.

The Vermonter Cold Remedy
1 part maple syrup
1 part lemon juice
2 parts whiskey
4 parts ice

Combine all ingredients and shake well. Go to bed and sip slowly!

Maple Syrup Cornbread

1/8 cup cornmeal
1 1/8 cup whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
1 egg, well beaten
1/2 cup maple syrup
3/4 cup milk
3 tbs. melted shortening

Mix the dry ingredients. Add the wet ingredients. Stir until well-blended but do not beat. Pour into a shallow well-greased pan (9" x 9" or larger). Bake for 20 minutes in hot 400 degree oven. Cut in squares and serve hot with butter.
